Ok guys so last week i decided to start doing "meal plans" every week so that i don't have to worry about what to cook. I went to Pinterest (surprise, surprise) and i looked at the crock pot freezer meals that i had pinned. My favorites for this week are the "Breakfast Burritos", "Lunch Burritos" & Beef Stroganoff. They were all great! And made meal times easy. Even tho it was a little tedious to make everything. Especially the burritos. These are all freezer recipes. :)
Breakfast burritos.
Ok, so the Breakfast Burritos were the easiest to make out of everything. What you need is:
2 dozen eggs
20 - 12 inch tortilla shells
1 lb ham
6 cups of cheese
I got everything except the ham from a Dollar General Market nearby. For the cheese pick any kind you like, i got one bag of mild cheddar, for the ham i got a 1 lb pack which ended up being short by a few pieces of ham :P. So when you get home start scrambling the 2 dozen eggs and toast/warm your tortillas. After you have done that it is time to start assembling your Breakfast Burritos. First lay down a tortilla, add ham, add spoonful (or two) of eggs, and top with cheese. Fold it up and wrap it in a paper towel, place in gallon zip lock freezer bag. Repeat 19 more times. Ta-Da! Place in freezer until needed. That's all you have to do. To heat them up put one in the microwave for 1 1/2 minutes, turn over, microwave again for another 1 1/2 minutes. They are simple and yummy.

For this recipe you will need a really big pot. I was not aware that you needed a HUGE pot, although i should have known because its a really big recipe. BUT it should last a LONNNNGGG time. Ok what you need is:
3 lbs Seasoned Ground Beef
32 oz 2 % Velveeta- Cubed
15 oz Can Red Enchilada Sauce
10 oz Can Green Enchilada Sauce
5 15 oz Cans Fat Free Refried Beans
1 T Chili Powder
1 T Cumin
1 T Onion Powder
1 T Garlic Powder
1 T Kosher Salt
1 T Oregano
40 12 inch Flour Tortilla Shells
The Enchilada sauce was the hardest for me to find because i could only find one type of enchilada sauce in my local grocery store. So i had to do with just one can of Mild Enchilada Sauce and it still turned out great. It taste very "taco bell" like after everything is done. Now if you are like me you will have to do this in 2 different pots so i had to split the recipe as best as i could. First brown and season the meat and drain, cube the cheese and melt it down in the hamburger meat. After it is completely melted add everything else to the pot. (If you have to split it up like I did try your best to do it as evenly as possible, good luck. :P) Warm your tortilla shells, and add mixture to the shell, be careful not to overfill them. Fold them up and then wrap them in a paper towel, wrap them in foil, and place in gallon zip lock freezer bag. Do it 39 more times! (i only did 20 and have been eating burritos every day this week from the 2nd pot. It is a LOT of food!) and Ta-Da! You are done. Pat yourself on the back if you actually did all 40 of them. These taste great with Salsa and Sour Cream on top! To reheat: remove foil, place one in the microwave for 1 1/2 minutes, turn over, heat for another 1 1/2 minutes. Enjoy!

Beef Stroganoff.
This was my favorite recipe that i made this week. It was GREAT! It was also pretty easy. What you need is:

2 cans cream of mushroom
1 cup chopped onions
2 tablespoons Worcestershire sauce
1/2 cup water
1 cup sour cream
2 tablespoon minced garlic
1 packet onion soup
chopped mushrooms
egg noodles
First off you cook the meat. While that is cooking i sauteed my mushrooms, onions, and garlic. After the meat is done cooking I let it cool and then cut it into smaller pieces and cooked them again this time in salt, pepper, and soy sauce. Add all of the ingredients together in a big pot and let it cook. You can also do this as a frozen crock pot meal by cooking the meat, let it cool, add all ingredients to a gallon zip lock freezer bag. Freeze it and then when you want to cook it thaw it and put it in the crock pot for 3-4 hours. *my beef stroganoff is pictured below*
